Food and nutrition research: boosting human resilience
Dietary habits regulate the bodyʼs homeostasis, and dysfunction of this regulatory mechanism can lead to various diseases. In recent years, the relationship between food and health has been proven at the molecular level, revealing that diet is the most critical factor in maintaining health and homeostasis. For instance, not only do fatty acids contained in oils serve as energy sources, but they also deliver vital signals to cells. We are advancing life science research that integrates medicine, pharmaceuticals, and agriculture, aiming to fully understand “nutritional signals” ̶ the starting point of all life phenomena ̶ based on various chemicals produced when metabolizing food. We aim not just to cure diseases but also to prevent them, and therefore want to link this to preventive medicine, preemptive medicine, drug development, and the creation of functional food ingredients for strengthening bodily homeostasis.
